Monday
pre run- 1/2 banana
breakfast - 1 egg w/ egg whites scrambled with a bit of cheddar cheese. 5 strawberries
morning snack - a giant honeycrisp apple (I mean really, what kind of trees are these things growing on) w/ peanut butter
lunch - chicken & wild rice soup, small 3oz can of tuna mixed w/ a bit of mayo on a slice of whole wheat
afternoon snack - baby carrots w/ roasted red pepper hummus
dinner - spaghetti squash w/ marinara and turkey meatballs.

also, started taking iron today because I've been feeling really run down in the afternoons and I'm just not sure I'm getting enough through food - we'll see if this helps.

sometimes - last night I ate hormel pork roast and 1/2 a box of Kraft Mac & Cheese for dinner :laugh:

so I lied - I got confused and made the dinner I had planned for tonight. so I'll be having the spaghetti squash tonight
revise last nights dinner to:

baked tilapia, asparagus and two small red potatoes.

Monday

Breakfast - missed it
Lunch - omelette, yogurt, banana
Afternoon snack - small bag of mixed nuts
supper - chicken, potato, and greens

Not to shabby.  ran 3 miles at lunch and did weights.

Tuesday -
slept in, so I'll be running after work.
breakfast - scrambled egg w/ egg whites, cheddar cheese, diced roasted sweet potatoes and grilled onions & peppers. glass of V8
am snack - 1/2 cup cottage cheese w/ a few small strawberries
lunch - can of chicken tortilla soup
pm snack - 3 akmak crackers with some peanut butter
dinner - take 2. spaghetti squash w/ turkey meatballs and marinara.  might toss some pepperidge farm garlic toast in the oven too - maybe :blush:

what kind of squash are you having?  I've eyeballing acorn squash the last few times I've been at the store, but I haven't bought one yet.
probably because the way I like it prepared is soo bad.  cut in half, filled w/ butter, brown sugar and a touch of maple syrup and then baked until soft.  yum!

buttercup squash is the good stuff !   baked is really good.  You can also poke holes in it and microwave it or peel, dice and boil but thats a lot of work.

Wednesday
pre run - 1/2 banana
breakfast - egg, egg whites, morningstar farms "sausage" patty
am snack - akmak crackers and peanut butter (I didn't eat these yesterday afternoon, so will have them this morning)
lunch - leftover Hormel pork loin, 3 bean salad and two small red pototoes
afternoon snack - whey shake w/ frozen mixed berries and spinach
dinner - making a stir fry w/ veggies and tempeh.  mmm!

Thursday
breakfast - scrambled egg w/ egg whites with a little bit of italian blend cheese and marinara, 1/2 cup strawberries
am snack - bartlett pear w/ string cheese
lunch - left over stir fry
pm snack- carrots w/ ranch dip made from greek yogurt
dinner- I think I'm going to make a quick salad
